Course Description

Beer is more than 90% water; its mineral composition, pH, microbial stability, and inorganic and organic compounds impact fermentation, flavor, and aroma. The source and treatment of brewing water is therefore important to the brewer. Though water is used throughout the beer production process, in this lesson we focus on product or brewing water. Water is the main ingredient in beer, so knowing the source and sustainability of both supply and brewing water allows you to better anticipate issues that could impact your beer production.

Benefits to the Learner

  • Differentiate supply water from brewing water
  • Identify and examine water sources
  • Explore the flavor of water
