Course Description

In this lesson, you will explore the various styles of and production methods for fortified wines and the well-defined series of steps in port and sherry production. You will discover how sherry can be aged oxidatively or biologically and how these producers often use what is known as the solera system. You will also examine the important winemaking techniques of distillation, oxidation, and fractional blending that are used in the making of these popular wines.
