Course Description

Providing a safe food product is the primary responsibility of food producers. But what about quality? Quality relates to the attributes that the consumers experience. In general, consumers will assume a food product is safe; they are therefore generally not selecting a food because of its safety, but its quality — does it provide them with the experience they want? In this lesson, you will explore the specific attributes that, when put together, define quality for food products. You will consider how to establish specific metrics to ensure food products consistently meet quality expectations, and that food safety and quality are both considerations in defining a product's shelf life. You will have the opportunity to select food product quality attributes and determine appropriate quality measurements and specifications.
