Course Description

The appropriate processing and packaging options for food products can vary widely depending on the key attributes of the product itself and its expected shelf life. The first step in selecting the best processing and packaging options for your specific goals is to identify what classification your product falls under and, therefore, what needs you must meet to achieve optimal food safety and quality. In this lesson, you will select a food product on which to focus; explore a variety of common food categories to help you determine the primary technical feasibility considerations for the safety and quality of your food product; and identify its classification, storage conditions, targeted shelf life, and key safety and quality issues to be addressed by processing and packaging choices. For the best experience, complete all three lessons in this series in order: Food Processing and Packaging: Identify Your Food Product's Classification; Explore Processing and Packaging Options; and Consider Business Criteria.
